If you're walking in Peschici's historic center and hear about paposcia, it's not pizza or just focaccia. It's one of the most iconic dishes of Gargano. For many visitors, it's the first dish to try in Peschici.
Paposcia: Peschici's signature specialty
Paposcia comes from the tradition of Gargano bakers. It's made with dough similar to bread, stretched long, and baked until the crust is slightly crispy and the inside is soft and airy.
Once out of the oven, it's opened and filled with simple ingredients, either traditional or modern.
Popular fillings include:
tomato and mozzarella;
prosciutto crudo;
local cured meats and cheeses;
grilled vegetables;
turnip tops or other local products.
The result is something different from both pizza and the classic sandwich. It's meant to be enjoyed hot and made fresh.

You won't have trouble finding it. In the historic center, there are several paposcerie. Two well-known spots are Paposceria San Michele on Corso Garibaldi and La Piazzetta da Nino. They're close to each other and make paposcia fresh, with various fillings to choose from.
The prices are quite reasonable. Simple paposce, like the classic with tomato and mozzarella, start at about 7 €. Richer fillings generally cost between 10 and 14 €. Special seafood versions, like those with salmon or seafood, go up to 18-20 €. So, paposcia is a good restaurant alternative, letting you enjoy a local specialty without spending much.
The advice is to leave your car in the outer parking lots and walk to the historic center. This avoids the ZTL and lets you stroll through the village alleys, choosing where to stop at your leisure.
If you prefer a special evening, Peschici also offers seaside restaurants. They have panoramic terraces, tables on the beach, and even an old trabucco on the Adriatic. These are different experiences worth choosing based on the kind of evening you want.
